Our client is part of a much larger group and is a well-respected and renowned integrated remote site services company, offering construction, camp services, catering, management and supply of labour camps for the oil and gas, mining, construction, humanitarian and post conflict sectors.
These are usually in remote locations and often challenging environments, where everything has to be brought to site.
The breadth of capabilities are enormous, the company can contract to supply every conceivable need, from initial build, to power and water infrastructure to postal services and telecoms, medical services, security, cleaning, even pest control.
They are currently seeking a Russian speaking Head Chef to be based in Basrah, Southern Iraq. This position is permanent on an open ended contract.
Reporting into an Operations Manager, the successful candidate will be responsible for the development of recipes and menus as per our clients policies and procedures. They will also plan and price menu items, order supplies, and keep records and accounts and will supervise and participate in cooking and baking and the preparation of foods.
Specifically you will apply and follow the contractual obligations and our clients policies and procedures.
You will follow, imply and maintain all ISO standards and requirements.
You will develop recipes and menus for all food operations.
You will plan menus, apply food cost control and working knowledge, to serve all ethnic groups such as Arabic, Continental, Indian and Far Eastern.
You will supervise and inspect food production and staff to ensure the highest Hygiene and Safety standards.
You will co-ordinate with management to food production (requisition, menu planning, quality control and staff management).
You will maintain food cost standard and cost.
You will promote safety and proper sanitation.
You will control staff working under your supervision by giving them the necessary training, guidance and instructions.
You will supervise the preparation to ensure quality as well as meet the desired requirements of clients.
You will control processed food items for taste, quality, presentation and quantity before service to clients.
You will co-ordinate with management to follow the availability of various food items as well as seasonal products.
You will determine food and beverage costs.
You will ensure proper usage of equipment and premises.
You will prepare daily orders for procurement of all food and related items required from the store.
You will implement new innovative menus for the satisfaction of clients.
You will lead your team positively for the growth of the concern.
You should be thorough in the implementation of HACCP compliance for the kitchen.
Finally you will comply with QHSE policies and rules set by the company and to continually support the same to ensure a safe and healthy working environment.
Knowledge and Skills:
You should be an energetic and accomplished Russian and English speaking Head Chef, Chef Manager or Executive Chef.
Your practical experience should ideally be accompanied by a degree qualification in food and beverage service and management or catering service, food production qualifications.
You should be highly self-motivated with the ability to communicate and motivate a varied team.
Experience of working in contracted catering services for reputable catering companies for oil companies in labour camps in oil field areas is highly desirable.
You should have experience of serving meals to over 400 persons per day,
You will have an excellent understanding of commercial catering operations and specifically a high degree of knowledge on food hygiene including HACCP, food handling and food presentation concepts and knowledge of popular catering and bakery products.
You should possess effective cost, quality and time management skills.
You should possess excellent verbal and written communication skills in Russian and English, be able to adapt to rapid changes in a positive manner and work to tight deadlines. The ability to speak Arabic is an advantage.
Superb inter-personal skills and instant credibility are essential as you will be inter-facing with a number of people from different backgrounds, nationalities and religions.
You will be resourceful with a flexible outlook, have the ability to multi-task in order to handle competing priorities and be able to fit in to an international dynamic and multi-cultural environment.
Finally you should possess a Drivers Licence and be PC / IT literate.
