Our Client is a subsidiary of a leading global provider of design, engineering, program management, construction management, and operations and maintenance support. They provide facilities management support to the International Peacekeeping Force which operates in the Sinai, Egypt.
They are currently seeking a Dining Hall Foreman to be based at the North Camp located in the North of the Sinai close to the Mediterranean coast. This is an 18 month contract position initially and then renewable for an additional 18 months.
Reporting into the Food Service Supervisor, the successful candidate will be responsible for supervising the preparation, production and serving of meals and will ensure that a high standard of hygiene and sanitation is maintained by the staff, facility and equipment within the dining facility.
You will be responsible for assisting the Food Service Supervisor within the assigned Dining Facility to meet the budgetary and performance requirements of the Contract to ensure maximum customer satisfaction.
Responsibilities include, but not limited to, supervise the preparation, production and serving of meals within the Dining Facility ensuring that recipe and menu requirements are met.
You will routinely inspect all activities within the assigned Dining Facility during the assigned shift to ensure high standards of personal and procedural hygiene, sanitation, safety, physical security and compliance with approved food preparation methods and techniques.
As required, you will supervise the issue, receipt, storage and control of food inventory, including random checking of issues to Remote Sites, receipts from Class I/Local Vendors during assigned shift.
You will ensure completion of the Shift Supervisor`s Check List.
You will monitor serving lines to ensure food items are correctly presented, served and replaced as required.
You will ensure leftover food items are handled, stored and disposed of correctly.
You will assign tasks to Egyptian National shift personnel.
You will assist with maintaining and preparing records, reports and other documentation as required. You will monitor methods and procedures to ensure conformance with the Statement of Work and our clients requirements, particularly with regard to preventive medicine standards.
You will ensure that all safety instructions are complied with and that all tools, machinery and equipment are correctly maintained and used and that safety gear is worn acceptably.
You will train and direct Egyptian National staff in applicable areas of performance in accordance with Generally Accepted Industry and Professional Standards and the On-Job- Training Program.
You will assist with and conduct and evaluate orientation and in-service professional training programs for all personnel.
Finally you will be required to work irregular hours/shifts as necessary to meet work requirements.
Although this role is based primarily at our clients North Camp, you may from time to time be required to work at their South Camp which is based at Sharm El Sheikh in South Sinai.

Knowledge and Skills:
You should be an energetic and accomplished English speaking Head Chef or highly self-motivated Chef Manager with the ability to communicate and motivate a varied team.
Your experience should be supported by a recognized hotel or catering qualification or equivalent military training school.
Experience of working in contracted catering services, in a military environment or for a leading international facilities management provider would be ideal, as would experience of working in post conflict areas, remote sites or in other arduous environments.
You will have an excellent understanding of commercial catering operations and specifically a high degree of knowledge on food hygiene including HACCP, food handling and food presentation concepts and knowledge of popular catering and bakery products.
You should possess excellent communication skills in English and be able to adapt to rapid changes in a positive manner and work to tight deadlines.
You should be a confident communicator with the ability to supervise, motivate, coach and train a team of Egyptian nationals. You will be flexible, possess initiative and able to pick things up quickly.
Superb inter-personal skills and instant credibility are essential as you will be inter-facing with a number of people from different backgrounds, nationalities and religions.
Finally you should be IT / PC literate, SAP experience preferred and possess a valid Home Country Drivers Licence.
