The Company and the Role:

The Company is a well-established typical Dartmouth style yachting establishment with the frantic demands of the dock-sider family and salty sea dog visitor during the Summer months, particularly intensive during the classic regatta season, leaving behind the more established, conservative and less frenetic visitor in the Winter.

The Company is currently looking for a Head Chef. The position is permanent.

The location can be very popular and so on busy nights there is a kitchen porter to help and food is serviced by the bar staff. You will be helping to support the General Manager by recommending, appealing, seasonal and sumptuous menus for those regular mealtimes, creating something alternative for the less formal lunch and then the master piece appropriate for those special events.

The restaurant caters for breakfast, lunch and dinner whilst also providing the facility for private functions and some spectacular corporate events. Whilst this is going on you will have the constant reminder of the beautiful setting, the sea lapping away and the lull of the halliards constantly reminding you that you`re in Devon heaven rather than urban chaos.

The establishment is made up of a large ground-floor bar with an informal dining area, opening onto the riverside terrace. Upstairs there is a more formal dining room with seating for about 50 people, as well as the much larger function room and a large balcony with a panoramic view of the harbour - breath taking.

The kitchen is modern and up-to-date enabling you and the team to maintain the high standards that have been achieved and remain very important to retain.

Your day-to-day commitment will be to run all aspects of the kitchen to provide crew suppers and restaurant grade meals; working an average 45hrs / week, 2 days off per week Sun / Mon / Tue with split shifts, lunch and dinner service. Come Christmas, depending on the year, there is the discretionary bonus.

Due to the roller coaster, seasonal, demands the establishment is also willing to see if the classic ski chalet chef might be interested - i.e. an arrangement of Head Chef during the Summer in Devon and Wintering in the Alps; this is not outside consideration.

Key Features of the Role:

As Head Chef you will be responsible for the efficient and effective running of the kitchen, planning and implementing, in conjunction with the manager, all of the new and existing menus, making sure that the preparation and presentation of the food is to the finest standard and complies, naturally, with food safety regulations.

You will help supervise, nurture and motivate the bar staff in order to achieve the current, spectacular, standards and become subsequently the role model.

You will maintain HACCP files, Food Safety Policy files COSHH and carry out Health and Safety at Work, all of these will be under your domain.

In the role you will be responsible for the food budget, liaise with other stakeholders such as: the General Manager, Heads of Department, the Financial Controller, Customers, Suppliers and the Directors - phew, it`s busy but enormously satisfying !

You will also be in control of breakages, ensuring stock levels are maintained, cleanliness must be constantly adhered to and all necessary kitchen reports kept up-to-date.

Knowledge and Skills:

As Head Chef you will need to have current experience of running your own kitchen or restaurant and managing a small team, as well as being able to effectively delegate to make it all happen. As always you will need to be flexible and able to adapt quickly, as well as having measured forethought whilst considering potential developments and preparing for them.

A proven and respectful kitchen / restaurant background, creative with an ability to look for fresh ideas. Your team will need to be inspired and encouraged, particularly during the frantic Summer months, so that the overall efficiency and splendour is maintained. Some basic accounting experience will be essential so that you are able to work with the accountant and the overall budgets.

You will be required to make conscious decisions and take required actions (positive or negative), for the benefit of the business. Emotionally robust, able to shoulder responsibility and remain focused in order to make `your plan` happen.

You must also have a personality to constantly review what`s going on and always looking to improve processes, train where required, develop the team, improve techniques, assess seasonal produce, discover local produce and source alternative fresh produce.

You must be able to be open and honest, able to treat people fairly, respect confidences and adhere to legal obligations.

Knowledge and prior experience of COSHH, Health and Safety at Work, HACCP and Food Safety Policy work processes is essential. A requirement will be to have a valid Health and Hygiene Certificate.

What`s on Offer:

Salary between £20,000 - £ 26,000 experience and skills dependant, 28 days holidays (including bank holidays), pension, free staff food whilst on duty, free motorcycle parking by the establishment and a Christmas `discretionary` bonus.
